I need some explanation about VAG parametrization files

Hi guys!
Can someone please explain me parametrization files in human language? How they work? How to edit options? Some examples?
I know that they are something like operation instructions for a specific module inside VAG car but I couldn't find any detailed info about that subject.
Can they be used to override factory specified options? For example remove ACC from equipment...
